My blueberry banana bake brings all the boys to the yard. Well, my boys at least. My husband and toddler cannot get enough of this and I couldn't be happier because it gets my toddler to consume fruit.
It's peak blueberry season and we've been getting amazing berries from Hindinger Farm in our CSA box but we've also had a blast berry picking at some local pick-your-own patches this year too. Which leads us to a plethora of blueberries.
What to do with so many berries?! WE BAKE!
I took this recipe from Skinnytaste and modified it a bit.
We start with overripe bananas and a giant basket of blueberries. Wash the berries and toss with a tablespoon of flour. It helps them not sink.
In a bowl, sift together 1 1/4 cup flour, 3/4 teaspoon baking soda, and 1/4 teaspoon salt. It's always good to have a toddler sous chef.
In a mixer, cream 2 tablespoons softened butter and 1/2 cup light brown sugar. Then add in 2 egg whites, 3-4 smashed bananas, a splash of vanilla, a splash of orange juice, one of your toddler's applesauce pouches, and mix well.
Combine the flour mixture with the wet mixture in the mixer. Turn off the mixer and gently fold in the blueberries.
Add in some other yummies you'd like. This time, we added white chocolate chips and crushed walnuts.
Pour into greased loaf pan and bake at 350 for an hour to an hour fifteen. My oven is wonky so I needed to go longer on this than normal. Just use your sense of smell. You can TOTALLY smell when it's done.
My favorite way to enjoy it is toasted with some fresh butter. Yum!
